Ingredients:
1.5 kg lamb or pork ribs
1 onion
2-3 cloves of garlic, finely crushed
45 ml sweet chili sauce
1 finely chopped chili (very fine)
30 ml maple syrup
30 ml lemon juice
pinch of salt
5 ml freshly ground black pepper
45 ml cooking oil
125 ml strong black coffee
Instructions:
In a bowl, combine the finely crushed garlic, sweet chili sauce, finely chopped chili, maple syrup, lemon juice, salt, black pepper, cooking oil and strong black coffee. Allow the mixture to sit for 15 minutes.
Place the ribs in a large container and pour the coffee marinade over them, ensuring the ribs are thoroughly coated. Let the ribs marinate for at least 3 hours.
Reserve the marinade for later use.
Preheat your grill or barbecue to medium-high heat.
Remove the ribs from the marinade and grill them in batches until they achieve a golden brown color and are fully cooked.
While grilling, baste the ribs occasionally with the reserved marinade to enhance the flavour.
Once the ribs are cooked, transfer them to a serving platter.
Pour the remaining marinade into a saucepan and cook over medium heat until it thickens and forms a sticky sauce.
Serve the grilled ribs with the sticky coffee marinade sauce on the side.
