How to sauté Wildeklawer carrots
Ingredients:
• 4-5 medium Wildeklawer carrots, peeled and sliced into thin rounds or sticks
• 2 tablespoons of olive oil or butter (or a combination of both)
• 1 teaspoon of honey or maple syrup (optional, for added sweetness)
• Salt and pepper to taste
• Fresh herbs like parsley, thyme, or dill for garnish (optional)
Instructions:
1. Start by washing and peeling the carrots. For a more rustic dish, you can leave the skin on, especially if using our freshly harvested carrots. Slice the carrots into thin rounds or sticks, ensuring they are evenly sized for consistent cooking.
2. In a large skillet, heat the olive oil or butter over medium heat. If you’re using both, start with the butter, letting it melt and then add the olive oil. The combination of the two gives the carrots a rich flavour and prevents the butter from burning.
3. Add the sliced carrots to the skillet in a single layer. Stir them occasionally to ensure they cook evenly. After about 5-7 minutes, the carrots should start to soften and develop a slight golden color.
4. If you prefer a touch of sweetness, drizzle the honey or maple syrup over the carrots at this point. Continue to sauté for another 2-3 minutes until the carrots are tender but still have a bit of bite. Season with salt and pepper to taste.
5. Once the carrots are cooked to your liking, remove them from the heat. Garnish with freshly chopped herbs like parsley, thyme, or dill for a burst of color and flavour. Serve immediately.
